I had high hopes for this bean (Ethiopia, Yirgacheffe) based on the advertised freshness of the small batches given to Amazon and was not disappointed. The batch I received had been roasted for less than 2 weeks upon arrival (Florida east coast). I love that they've probably not even left the state after roasting.I enjoy the beans coarsely hand-ground with a burr grinder in a French press. The aroma and taste is wonderfully full and fresh. I just set up a monthly subscribe and save order to weave these into my other local roasters.Each bag has freshly roasted and packed coffee beans, which is so important to those who really care about the flavors of their coffee (as opposed to those who consume coffee for caffeine). And the flavors are amazing!I decided to buy the Rwanda beans for my shaken espresso with orange and espresso Romano because Rwandan beans are known for the fruity, citrusy flavor. When I tasted it by itself, though, I was able to taste layers of deep, complex flavors - bourbon, wine, fruits, etc. So, I did make the shaken espresso and espresso Romano as intended and they turned out wonderfully, but I also made a couple of batches of cold brew, which was equally amazing.I'm glad I have this on my Save & Subscribe list. I would like to try other beans by this roaster, too!I purchased the Cubico whole bean Guatemala Antigua coffee through Amazon. It is my favorite and I order four bags at a time so that I don't run out. Unfortunately today I received my order and it was the wrong grind. I order the whole bean so that I can grind it myself for my coffee press. It was delivered medium grind. I ususally grind it coarsely. This has never happened before from Cubico and it was a disappointment since I was really looking forward to my coffee plus it is very expensive. Normally the quality of this coffee is worth the price. Of course this coffee is not eligible for return. I have notified the seller about my experience.**I would like to update my review**I wrote to the seller the same day I received my coffee and I received an immediate response. He seller is sending me the correct coffee at no extra charge. The company rep was polite and responsive. I admire their desire to maintain a good reputation. For their customer service and the quality of their product, I give them five stars.I ordered this because I had run out of Yurgacheffe that I loved. I expected them to taste pretty much the same. I made my first cup right away, using the same amount of coffee I had used before. I use a French press. I have to say I really disliked it! It tasted sour and had a bitter finish. But I read up on it and realized I might have made it wrong. So I tried it again, this time measuring 2 tablespoons (instead of 3) for 8 oz of water (I always use bottled water.). When I poured it, it looked lighter than i usually like. Added cream and some sugar. And I changed my opinion. It was interesting. The "sour" was much less pronounced, and the bitter was much less bitter. It tasted like a really good coffee but was just very different from what I'd expected. I had made it too strong the first time. It turned out the difference between this coffee and my usual one was this one was "medium" roast, and my other one was "medium city plus). That one was a slightly darker roast but still "medium." If you think it's sour and bitter, maybe try using less coffee in the water. It makes a big difference. The package recommends 1 tablespoon, I used 2, and it's very good.I ordered a pound of the Peru medium roast whole bean coffee on 4/13 and received on 4/16. Can't really beat the convenience/shipping speed and 15$ for a pound of good coffee is a pretty good deal. I was slightly disappointed to see the roast date 3/16 was a month ago, but I imagine with current health pandemic their operation has probably been impacted. I was happy to see that their medium roast really was medium, seems like most places call it medium when it's really pretty dark. I typically go for medium roast because it brings out the best flavors in my mind. I brewed a cup right away and there was no bloom to speak of, probably because it was roasted a while ago. Taste was really quite good though. I'm not into tasting notes, I would just describe it as a very tasty well rounded cup of coffee. My usual go to coffee is Peet's Big Bang, and I found it similar to that. I would happily order again.Not to say that it is bad. Just not for me.I don't know much about flavor profiles but at first I had trouble with it tasting too "acidy". Or bitter- I like my coffee smooth. Experimented a little more and at first I felt "3-4 stars" about it. A little too "bright" tasting for me. Then in my Aeropress I used cooler water (180°), filled only to #2 indicator, and diluted. Add a little almond milk and teaspoon of coconut sugar... WOOOOW. Unique and smooth flavor that I can't really explain. At first I thought it was kind of weak in terms of caffeine but realized that my tolerance to caffeine has gone up dramatically.I'm new to coffee. I've been experimenting with different beans and brewing methods in an aeropress. Someone recommended Yirgacheffe and I gave this brand a try. I liked the price, the prime delivery, and the recent roast date on the bag. Something like that bought locally would cost a lot more and probably wouldn't be as fresh.
